Healthy honey and oat cookies

Bowls with baking ingredients

I’ve been loving playing around with oat flour these days. With more time at home (thanks Covid), It’s been such fun experimenting with my mid-morning snacks. This means, trying out new recipes and most importantly building up a variety of snack options. It’s always a happy moment when a recipe comes together. You definitely need to give these healthy honey and oat cookies a try!

These cookies are excellent mid-morning snacks. They also travel well if you need nourishment on the go. I often pack a few in my handbag in case I get the snack attack whilst I’m out (which is often.) Another thing to keep in mind is that these make an excellent brekkie on the go if you’ve got a busy morning. So, pre prep these bad boys by simply throwing all the ingredients into one bowl, mixing and popping in the oven. The hardest part is waiting for them to cool be for chowing down!

Healthy Honey and Oat Cookies

  • 1/3 cup oat flour (or steel-cut rolled oats ground up in a blender)
  • 2 tbs sunflower seeds.
  • 1 tbs diced almonds
  • 2 tbs linseeds
  • 2 tbs pumpkin seeds
  • 1 tbs raw honey
  • 2 tbs macadamia nut oil (can substitute with melted coconut oil)
  • 3 tbs warm water
  • 1 tbs almond butter

Simply add everything into one bowl and mix.

Use a tablespoon-sized amount for each cookie and place the mixture onto a pre-greased oven tray. Pop them in the oven at 180 degrees for 10 minutes (all oven times differ so keep an eye on them and take them out when they are slightly brown on top.)
