Coconut Almond Porridge

This Gluten-Free Almond Coconut Porridge is satisfying and so fulling. It’s a great first choice when you know you have a busy morning and need to keep your body fueled. Especially on those days that you know, you won’t have the time to just grab a mid-morning snack.

Coconut Almond Porridge Recipe:

  • 1/8 cup almond flour
  • 1 tbs pumpkin seeds
  • ¼ cup desiccated coconut
  • 1 tbs sunflower seeds
  • ¾ cup milk of choice
  • 1 tbs ground linseed (Flaxseed)
  • Optional: Half a banana

Directions:

Add everything into a pot and simmer on low heat until thickened, stirring occasionally. Pour it into a bowl and add your toppings of choice.

Optional: Slice and add half a banana to the pot with all the ingredients for natural sweetness. It will get softer as the porridge cooks and mix in smoothly.

Optional toppings:

  • Almond butter
  • Fruit
  • Cocao nibs
  • Hemps hearts
  • Walnuts
  • Brazil nuts
  • Drizzle of raw honey

If you want to skip the honey and naturally sweeten your breakfast I recommend adding the optional half a banana whilst cooking the porridge or use the 1/2 banana or a 1/4 of an apple as a topping. These fruits are naturally sweeter and will hit the sweet spot without needing to add a drizzle of honey. Adding berries like strawberries or blueberries is a great way to boost your antioxidant intake in the morning. Add some hemp hearts for some additional protein and some nuts for some crunch and healthy fats.
