After doing a 10-day health reset earlier this year, that included 10 days of no sugar (gasp). I realised, that I ate a lot of honey. Yes, raw honey is so much better for you than refined sugar however, it’s still a form of sugar. And the fact is, like with all things, too much anything isn’t in anyone’s best interests. So determined to reduce my honey intake, I went searching for sugar-free options to my mid-morning snack. With the requirement, of course, that they still yum. And so the genuis of the simple oat and banana pancakes was born.

Ingredients:
- 2 Banana’s
- 2 Eggs
- ½ cup of rolled oats
- 1/8 teaspoon baking soda
- ¼ teaspoon cream of Tatar
- (Or just use a ½ teaspoon baking powder instead of the baking soda and cream of Tatar)
- Pinch of salt
- 1 teaspoon cinnamon
Method:
Place it all into a blender and blend until smooth. Let the batter sit for 5 or so minutes before heating up the pan. A little bit of butter is the best option make them not stick to the pan but use your oil of choice.

The next step, you HAVE to smear these simple oat and banana pancakes with almond butter and add some sliced-up fruit. Some apple, banana, grapes, melon, pineapple… your choice. Sprinkle some sunflower seeds, nuts, coconut flakes and a table spoon of cocoa nibs. Add some nut milk or coconut milk and enjoy.
